This is my go-to when I want a salad or “something quick and healthy” for lunch or as a side for dinner. Back home in Russia, a salad is usually a mix of chopped tomatoes, cucumbers, onion, radish, herbs and sunflower oil. In the U.S. we’re spoiled with an endless variety of salad greens, so I always add a cup of those to my salads too. Lately, I’ve been really into watercress and baby bok choy!
Feel free to change or adjust any ingredients. Bell pepper, carrots, green onions, and dill are also great in this greens-veggie-oil combo. It’s best to dress with a good quality flavorful oil, like extra-virgin, cold-pressed, unfiltered oil.
My "Everyday" Salad
- 1 cup fresh salad greens
- (I use a mix of baby kale, spinach, baby bok choy, watercress)
- 1 small cucumber
- 3-5 cherry tomatoes
- 1 large or 2 small radishes
- a handful of fresh parsley
- Olive oil, salt to taste
1. Rinse and dry the greens. Place in a bowl.
2. Trim, cut in half lengthwise and slice cucumber. Cut tomatoes in quarters. Cut radish in half and slice thin. Add all to the bowl.
3. Rinse, dry and chop parsley, add to the bowl.
4. Drizzle with oil and season with salt. Enjoy right away!
